Ingredients for 4 servings
1 cup of oats Fytro
¾ Cup broken walnuts
2 cloves garlic
1 medium onion
2 carrots
4 potatoes
1 leek
2 zucchini cut into cubes
2 ½ cups. cleaned mushrooms
1 cup. wholemeal flour
Vegetable cube Knorr
¼ Of a cup.tomato sauce
½ Cup. prunes, dried
2 large leaves of parsley
3 tbsp. of crisco
Fresh black pepper
Execution:
1.Preheat the oven to 180 °C.
2.Melt the margarine in a large non-stick pan.
3.Add the onion and garlic and cook for 5 minutes.
4.Add the vegetables to the saucepan and continue to cook additional 10 minutes.
5.Add the leek, zucchini and mushrooms to the pot and cook for 1 minute.
6.Stir in the flour and cook for 1 minute stirring continuously.
7.Pour in the vegetable cube Knorr, tomato sauce and prunes and stir until the mixture is thick.
8.Add the parsley mixed with fresh black pepper and put the whole mixture into a deep baking dish.
9.Pour into the pan the oats and the nuts and bake for 30 minutes.
