Holiday rice with turmeric, pistachios, and pomegranate

Ingredients

350 g rice parboiled

4 tbsp. fresh butter

4 tbsp. olive oil

1 tbsp. turmeric

1 liter of vegetable broth

2 cups. tea seeds from a pomegranate

150 gr. peanuts peanuts peeled

Preparation

In a saucepan, heat the butter and olive oil. Pour in the rice and sauté, stirring constantly, until it is completely dry the pot. Add the turmeric and stir well.

Then add the vegetable broth, add salt and cook the rice until completely absorbed the broth and “dry”. Check out the rice from the heat and allow to cool slightly.

Keep a few of the seeds of the pomegranate for garnish and the rest of the drop in the rice and stir to incorporate evenly. Put rice in the mold to get the shape and then turn it upside down on serving platter.

Sprinkle the surface with pomegranate, kept and peanuts and serve.
